وصفة المطبقة  Mtabga recipe

Stuffing components (مكونات الحشوة)

- 2 Bundles of green onions     حزمتين من البصل الأخضر

- 200 g Clip or minced meat    لحم مقطع أو مفروم 200 غ

-  Little of suet                       القليل من الشحم

- Chopped parsley  ( 1 bunch)        حزمة)   بقدونس مفروم)

- Little of chopped coriander         القليل من الكزبرة المفرومة

- Minced garlic                      ثوم مفروم

- A half tablespoon of Tunisian spice mix   نصف ملعقة كبيرة من  خلطة التوابل التونسية

- Salt                    ملح

- A tablespoon of ground red pepper  ملعقة كبيرة من الفلفل الأحمر المطحون

- A tablespoon of tomato paste        ملعقة كبيرة من  معجون الطماطم

- A tablespoon of harissa                 ملعقة كبيرة من  الهريسة

- Cup of olive oil                    كأس من زيت الزيتون

- Dried mint                  نعناع مجفف

Dough components (مكونات العجينة)

- 1 Kg of fine semolina       كغ من السميد الناعم 1 

- Water                   ماء

- Salt                    ملح

 إرشادات  (Directions)

1. Cut onions             قطع البصل

2. Put the oil in a frying pan            ضع الزيت في مقلاة

3. Add the onion and stir until it wilts   أضف البصل و حركه حتى يذبل

4. Add the meat section and suet      أضف اللحم المقطع و الشحم

5. After stiring the onions and meat and suet for a few minutes, add the chopped garlic   بعد تحريك البصل و اللحم و الشحم لبعض دقائق, أضف الثوم المفروم

6. Add salt and move well   أضف الملح و حرك جيدا

7. Add parsley and stir. Then gradually add the Tunisian spices, the 

red pepper, the tomato paste, and finally the  harissa

أضف البقدونس و حرك الخليط. ثم أضف تدريجيا البهارات التونسية و الفلفل الأحمر و معجون الطماطم و أخيرا الهريسة

8. Last step is to add dried mint  آخر خطوة هي إضافة النعناع المجفف

9. After that the stuffing is ready you should prepare the dough. Mix 

soft semolina and a little salt and water

بعد أن أصبحت الحشوة جاهزة يجب تحضير العجينة. سنخلط السميد الناعم و القليل من الملح و الماء

10. After that the stuffing cooled and the dough rest, we  divide it  into 

equal balls

بعد أن تبرد الحشوة و  ترتاح العجينة  نقسمها إلى كرات متساوية

11. Then, we roll out the dough balls       ثم نبدأ بفرد كرات العجينة

12. Put the stuffing and distribute it over the dough  نضع الحشوة و نوزعها فوق  العجينة

13. Put another circle of the dough over the filling and pinch edges

نضع جزء آخر من العجينة فوق الحشوة. نضغط جيدا على الأطراف 

14. Put  the dough on an iron pan special for bread  وضع العجين في مقلاة

 الحديد خاص بالخبز

15. When it turns brown, flip to the other side  عندما يحمر نقلب للجانب 

الآخر

- 200 g rice                    200 غ من الأرز 

- Two tomatoes, cut into cubes   حبتين طماطم مقطعة إلى مكعبات

- Chopped parsley                 بقدونس مفروم

- 1 green pepper, cut into cubes    حبة فلفل أخضر مقطعة إلى مكعبات

- Olives              زيتون

- Grated cheese      جبن مبشور

- 1 Onion, cut into cubes                 حبة بصل مقطعة إلى مكعبات

- Salt                   ملح

- Black pepper     فلفل أسود

- Two tablespoons olive oil                  ملعقتين زيت زيتون

 - Tuna              التونة

1.  Wash rice in hot water    غسل الأرز بالماء الساخن

2. Filter rice from water     تصفية الأرز من الماء

3. Steam rice in a pan  طبخ الأرز بالبخار في وعاء

4. Mix all ingredients              خلط كل المكونات

5. Add salt, black pepper and olive oil يضاف الملح والفلفل الأسود وزيت الزيتون

6. Finally add tuna and olives to the salad  أخيرا إضافة التونة والزيتون للسلطة
